Ingredients

  • 4 thick pork chops
  • 3 cups fresh whole strawberries
  • 1/2 cup dry bread crumbs
  • 1 tablespoon hot water
  • 2 tablespoons melted butter
  • 1 tablespoon diced celery
  • 1 tablespoon minced onion
  • 1 tablespoon minced green pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sage
  • 1 tablespoon cooking oil
  • 4 tablespoons brown sugar
  • 1/4 cup soy sauce

Instructions

  1. In a bowl, combine 1 cup of whole strawberries, bread crumbs, hot water, melted butter, diced celery, minced onion, minced green pepper, salt, pepper, and sage.
  2. Stuff the pork chop pockets with the mixture and close with toothpicks.
  3. In a large skillet, heat the cooking oil and brown the pork chops on both sides.
  4. Remove the chops from the skillet and place them in a baking dish.
  5. In a small saucepan, mash the remaining strawberries and combine with brown sugar and soy sauce.
  6. Baste the pork chops with the strawberry mixture.
  7. Cover the baking dish with foil and bake in a preheated 375°F oven for 90 minutes.
  8. Remove the chops at 30-minute intervals to taste and baste again.
