Ingredients

  • 2 cups shredded cabbage
  • 1 cup chopped zucchini or yellow summer squash
  • 1 cup chopped cucumber
  • 1/2 cup chopped green pepper
  • 1/4 cup sliced green onions
  • 1/4 cup mayonnaise or salad dressing
  • 1/4 cup sliced radishes or carrots
  • 1/2 cup dairy sour cream
  • 1 tablespoon lemon juice
  • 2 teaspoons prepared horseradish
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup coarsely chopped peanuts

Instructions

  1. In a salad bowl, combine shredded cabbage, chopped zucchini or yellow squash, chopped cucumber, chopped green pepper, sliced green onions, and sliced radishes or carrots.
  2. Chill the salad mixture in the refrigerator.
  3. In a small bowl, blend mayonnaise or salad dressing, dairy sour cream, lemon juice, prepared horseradish, prepared mustard, salt, and pepper.
  4. Pour the dressing over the chilled vegetables.
  5. Toss to coat all ingredients evenly.
  6. Sprinkle with coarsely chopped peanuts, if desired.
  7. Garnish with slices of zucchini, cucumber, green pepper, or radishes, if desired.
  8. Refrigerate leftovers before serving.
