Ingredients

  • 4 Tbsp. butter
  • 3 c. milk
  • 1/4 tsp. salt
  • 1 Tbsp. vegetable oil
  • 3 boneless, skinless chicken breasts
  • 4 c. chopped fresh vegetables (broccoli, mushrooms, peppers, celery, green beans)
  • 1/4 c. onions
  • 1/2 lb. pasta
  • 3 Tbsp. flour
  • 1/2 tsp. basil
  • 1/4 tsp. pepper
  • 1/2 c. grated Parmesan cheese

Instructions

  1. In a saucepan, melt 2 tablespoons of butter.
  2. Stir in flour and cook for 2 minutes until bubbly.
  3. Remove from heat and whisk in milk. Return to heat.
  4. Bring to a simmer and cook over medium heat until smooth and thickened, stirring constantly.
  5. Stir in 1/2 cup grated Parmesan cheese, basil, salt, and pepper.
  6. Set the sauce aside.
  7. In a large skillet, heat vegetable oil and cook thinly sliced chicken breasts until browned and cooked through.
  8. In a separate pot, cook pasta until al dente, then drain.
  9. Sauté chopped fresh vegetables and sliced onions until tender.
  10. Combine cooked chicken, vegetables, and pasta with the sauce.
  11. Toss everything together and serve hot.
