  • 1 (4 oz.) can chopped olives
  • 3 tsp. salt
  • 3/4 cup yellow cornmeal
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. In a large, heavy frying pan, put olive oil and butter.
  2. Melt the butter and olive oil; then turn the burner off.
  3. Chop up the onion and mince the garlic; add to the pan.
  4. Cook slowly, stirring constantly, for 10 minutes.
  5. Add the ground round to the pan and cook for 15 minutes, stirring occasionally.
  6. While still cooking, add the packed tomatoes and break up the big pieces with a spoon.
  7. Add the cream-style sweet corn, mushrooms (including liquid), chili sauce, and chopped olives.
  8. Add salt to the mixture.
  9. Sift the cornmeal slowly into the pan with a big spoon, stirring as you add.
  10. Add half of the grated Parmesan cheese (1/4 cup), stirring thoroughly.
