Ingredients

  • 1 lb. pork sausage
  • 1 cup chopped onion
  • 1 cup sliced celery
  • 12 oz. can of whole kernel corn
  • 15 oz. can kidney or other beans
  • 8 oz. fresh mushrooms
  • 1/4 cup melted butter or margarine
  • 1 tsp. sage
  • 1/4 tsp. pepper
  • 5 cups corn bread
  • 3/4 cup chicken broth

Instructions

  1. Fry the sausage, chopped onion, and sliced celery until the sausage becomes brown and the onion is tender.
  2. Add the whole kernel corn, beans, sliced mushrooms, melted butter or margarine, sage, and pepper.
  3. Drizzle the chicken broth over the mixture and toss lightly until evenly mixed.
  4. Transfer to a covered 4-quart casserole dish.
  5. Bake at 375°F (190°C) until hot, about 45 minutes.
  6. Alternatively, bake covered alongside the turkey for the last 30 minutes of roasting.
