Ingredients

  • 2 lb. pork sausage
  • 1 c. chopped onion
  • 1 c. sliced celery
  • 1 c. pecan halves
  • 12 oz. can whole kernel corn, drained
  • 2 (4 oz.) cans sliced mushrooms, drained
  • 1/2 c. melted butter
  • 1 tsp. dried sage, crushed
  • 1 c. dried mixed fruit
  • 3 hard-boiled eggs, peeled and chopped
  • 5 c. crumbled cornbread
  • 1 1/2 c. chicken broth

Instructions

  1. In a large skillet, crumble the sausage.
  2. Cook the sausage, onion, and celery until the sausage is no longer pink.
  3. Stir in pecan halves and cook until the sausage is lightly browned.
  4. Pour the mixture into a large roasting pan to mix.
  5. Add corn, sliced mushrooms, melted butter, dried sage, and dried fruit.
  6. Stir well until blended.
  7. Stir in the chopped hard-boiled eggs, then mix in the crumbled cornbread.
  8. Add chicken broth and stir to combine.
  9. Beat the eggs and add to the mixture.
  10. Let set for 15 to 20 minutes to absorb the liquid.
  11. If moister dressing is desired, add more broth.
  12. Transfer to baking pans or bake in the same roasting pan.
  13. Bake in a 400°F oven for 30 to 40 minutes or until crusty and brown on top.
