Ingredients

  • 6 c. chicken broth
  • 6 medium potatoes, peeled and shredded
  • 4 medium carrots, shredded
  • 4 celery stalks, diced
  • 1 large onion, chopped
  • 1 large green pepper, diced
  • 1 small sweet red pepper, diced
  • 1 small sweet yellow pepper, diced
  • 1/2 c. flour
  • 1 1/2 tsp. salt
  • 1 tsp. Italian seasoning
  • 1/2 tsp. pepper
  • 1 c. water
  • 4 c. 2% milk

Instructions

  1. In a soup kettle, combine the chicken broth, potatoes, carrots, celery, and onion; bring to a boil.
  2. Reduce heat, cover, and simmer for 20 minutes.
  3. Add the green pepper, red pepper, and yellow pepper; return to a boil.
  4. Reduce heat, cover, and simmer for 10 to 15 minutes or until vegetables are tender.
  5. In a separate bowl, mix the flour, salt, Italian seasoning, and pepper.
  6. Gradually stir in water and milk, then add to the soup kettle.
  7. Cook and stir until the soup thickens and is heated through.
