Ingredients
- 6 c. chicken broth ⓘ
- 6 medium potatoes, peeled and shredded ⓘ
- 4 medium carrots, shredded
- 4 celery stalks, diced ⓘ
- 1 large onion, chopped ⓘ
- 1 large green pepper, diced ⓘ
- 1 small sweet red pepper, diced ⓘ
- 1 small sweet yellow pepper, diced ⓘ
- 1/2 c. flour ⓘ
- 1 1/2 tsp. salt ⓘ
- 1 tsp. Italian seasoning ⓘ
- 1/2 tsp. pepper ⓘ
- 1 c. water ⓘ
- 4 c. 2% milk ⓘ
Instructions
- In a soup kettle, combine the chicken broth, potatoes, carrots, celery, and onion; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add the green pepper, red pepper, and yellow pepper; return to a boil.
- Reduce heat, cover, and simmer for 10 to 15 minutes or until vegetables are tender.
- In a separate bowl, mix the flour, salt, Italian seasoning, and pepper.
- Gradually stir in water and milk, then add to the soup kettle.
- Cook and stir until the soup thickens and is heated through.
