Taco Beef Casserole

A hearty and flavorful taco beef casserole combining seasoned ground beef, corn, olives, and cheese, layered with tortillas for a satisfying family-friendly Mexican-inspired dish.

Ingredients

  • 1 medium onion, finely chopped
  • 1 tablespoon oil
  • 2 pounds ground chuck or sirloin
  • 1 package (1 1/4 ounces) Taco Seasoning
  • 1 cup water
  • 1 (9-ounces) package frozen corn, thawed
  • 1 (6-ounces) can pitted olives, ripe
  • 6 corn tortillas
  • 1 can enchilada sauce
  • 2 cups shredded cheddar cheese

Instructions

  1. In a large frying pan, sauté the onion in oil until translucent.
  2. Push the onion to the sides of the pan and add ground beef; cook until browned, stirring occasionally.
  3. Add taco seasoning and water; cover and simmer for 10 minutes.
  4. Remove from heat and stir in the thawed corn and chopped olives (reserve 1/3 cup olives for topping).
  5. Preheat oven if baking, then layer tortillas in a baking dish.
  6. Spread a portion of the meat mixture over the tortillas, then pour enchilada sauce and sprinkle with cheese.
  7. Repeat layers as desired, finishing with cheese on top.
  8. Bake at 375°F (190°C) for about 20 minutes until bubbly and golden.
  9. Garnish with reserved olives before serving.
