Taco Beef Casserole
A hearty and flavorful taco beef casserole combining seasoned ground beef, corn, olives, and cheese, layered with tortillas for a satisfying family-friendly Mexican-inspired dish.
Ingredients
- 1 medium onion, finely chopped ⓘ
- 1 tablespoon oil ⓘ
- 2 pounds ground chuck or sirloin ⓘ
- 1 package (1 1/4 ounces) Taco Seasoning ⓘ
- 1 cup water ⓘ
- 1 (9-ounces) package frozen corn, thawed ⓘ
- 1 (6-ounces) can pitted olives, ripe ⓘ
- 6 corn tortillas ⓘ
- 1 can enchilada sauce ⓘ
- 2 cups shredded cheddar cheese ⓘ
Instructions
- In a large frying pan, sauté the onion in oil until translucent.
- Push the onion to the sides of the pan and add ground beef; cook until browned, stirring occasionally.
- Add taco seasoning and water; cover and simmer for 10 minutes.
- Remove from heat and stir in the thawed corn and chopped olives (reserve 1/3 cup olives for topping).
- Preheat oven if baking, then layer tortillas in a baking dish.
- Spread a portion of the meat mixture over the tortillas, then pour enchilada sauce and sprinkle with cheese.
- Repeat layers as desired, finishing with cheese on top.
- Bake at 375°F (190°C) for about 20 minutes until bubbly and golden.
- Garnish with reserved olives before serving.
