Ingredients

  • 1 cup firmly packed brown sugar
  • 1 (10 oz.) jar apricot preserves
  • 1/2 cup melted butter
  • 1 teaspoon vanilla
  • 2 eggs
  • Powdered sugar
  • 1 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mashed bananas
  • 1 cup chopped nuts

Instructions

  1. Grease a 9 x 13-inch pan.
  2. In a large bowl, combine brown sugar, apricot preserves, melted butter, vanilla, and eggs.
  3. Blend well until smooth.
  4. Stir in flour, baking soda, salt, mashed bananas, and chopped nuts just until moistened.
  5. Pour the batter into the prepared pan.
  6. Bake at 350°F (175°C) for about 35 minutes or until done.
  7. Cool the bars completely.
  8. Spread with powdered sugar.
  9. Cut into bars and serve.
