Three Bean Curry

Ingredients
- 3 Tbsp. butter ⓘ
- 3 cloves garlic, minced ⓘ
- 1 carrot, shredded ⓘ
- 1 large onion, chopped ⓘ
- 1/4 lb. mushrooms, sliced ⓘ
- 2 Tbsp. curry powder ⓘ
- 1/2 to 1 cup water ⓘ
- 1 package frozen small lima beans ⓘ
- 1 package frozen small green beans ⓘ
- 1 package frozen small peas ⓘ
- 1/2 cup plain yogurt ⓘ
- 1/2 cup peanuts, chopped ⓘ
Instructions
- Melt butter in a large frying pan over medium heat.
- Add minced garlic and sauté for one minute.
- Add shredded carrot, chopped onion, and sliced mushrooms; sauté until tender.
- Stir in curry powder.
- Add water, frozen lima beans, green beans, and peas; simmer until vegetables are tender.
- Serve over rice, top with a dollop of yogurt, and sprinkle with chopped peanuts.
