Ingredients

  • 3 Tbsp. butter
  • 3 cloves garlic, minced
  • 1 carrot, shredded
  • 1 large onion, chopped
  • 1/4 lb. mushrooms, sliced
  • 2 Tbsp. curry powder
  • 1/2 to 1 cup water
  • 1 package frozen small lima beans
  • 1 package frozen small green beans
  • 1 package frozen small peas
  • 1/2 cup plain yogurt
  • 1/2 cup peanuts, chopped

Instructions

  1. Melt butter in a large frying pan over medium heat.
  2. Add minced garlic and sauté for one minute.
  3. Add shredded carrot, chopped onion, and sliced mushrooms; sauté until tender.
  4. Stir in curry powder.
  5. Add water, frozen lima beans, green beans, and peas; simmer until vegetables are tender.
  6. Serve over rice, top with a dollop of yogurt, and sprinkle with chopped peanuts.
