Creamy spinach and cheese roll-ups feature tender lasagna noodles filled with a savory blend of cheeses, spinach, and peppers, perfect for a comforting family meal or special dinner.

Ingredients

  • 8 lasagna noodles
  • 1 red pepper, seeded and chopped
  • 2 cups shredded Mozzarella
  • 3/4 cup Ricotta cheese
  • 1 egg, slightly beaten
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 cup light cream or half and half
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 2 (10 oz) packages frozen spinach, finely chopped, cooked, squeezed and sautéed in butter

Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package directions. Cool in a bowl of cold water; set aside.
  3. Saute chopped onion and red pepper with 3 tablespoons of butter until tender, about 5 minutes.
  4. Combine cooked spinach, sautéed onion and red pepper, 1 1/2 cups shredded Mozzarella, Ricotta cheese, 1/2 cup Parmesan, and a slightly beaten egg; set aside.
  5. Spread the cheese and spinach mixture onto each lasagna noodle and roll up.
  6. Place the roll-ups seam side down in a greased baking dish.
  7. In a saucepan, melt 1/4 cup butter, stir in 1/4 cup flour, pepper, and salt.
  8. Gradually add 1 cup light cream or half and half, stirring constantly until thickened.
  9. Pour the sauce over the roll-ups and sprinkle with remaining 1/2 cup Mozzarella.
  10. Bake in the preheated oven for about 25-30 minutes until bubbly and golden.
