Tipsy Cheese Soup

Ingredients
- 1/4 cup butter or margarine ⓘ
- 1 cup chopped onions ⓘ
- 1/2 cup chopped celery ⓘ
- 1/2 cup chopped carrots ⓘ
- 1/4 cup minced fresh parsley ⓘ
- 2 cloves garlic, minced ⓘ
- 1/4 cup flour ⓘ
- 1 tablespoon dry mustard or Dijon mustard ⓘ
- 1/4 teaspoon ground pepper ⓘ
- 2 cups half and half or milk ⓘ
- 1 cup chicken broth ⓘ
- 12 ounces cubed American process cheese or Cheez Whiz ⓘ
- 1 (12 oz) can beer ⓘ
Instructions
- Melt butter in a large saucepan over medium heat.
- Stir in chopped onions, celery, and carrots; cook until vegetables are tender crisp.
- Stir in flour, dry mustard or Dijon mustard, and ground pepper; cook for 1 to 2 minutes.
- Lower heat to medium-low.
- Gradually stir in half and half or milk and chicken broth.
- Cook uncovered for 10 to 15 minutes until soup is thickened.
- Add cubed American process cheese or Cheez Whiz and beer.
- Stir constantly until cheese is melted. Do not boil.
