Ingredients

  • 1/4 cup butter or margarine
  • 1 cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/4 cup minced fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 1 tablespoon dry mustard or Dijon mustard
  • 1/4 teaspoon ground pepper
  • 2 cups half and half or milk
  • 1 cup chicken broth
  • 12 ounces cubed American process cheese or Cheez Whiz
  • 1 (12 oz) can beer

Instructions

  1. Melt butter in a large saucepan over medium heat.
  2. Stir in chopped onions, celery, and carrots; cook until vegetables are tender crisp.
  3. Stir in flour, dry mustard or Dijon mustard, and ground pepper; cook for 1 to 2 minutes.
  4. Lower heat to medium-low.
  5. Gradually stir in half and half or milk and chicken broth.
  6. Cook uncovered for 10 to 15 minutes until soup is thickened.
  7. Add cubed American process cheese or Cheez Whiz and beer.
  8. Stir constantly until cheese is melted. Do not boil.
