Ingredients

  • 2 oz. white or yellow onion
  • 1 c. chopped celery
  • 2 c. grated carrots
  • 1 (16 oz.) can stewed tomatoes
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 2 cubes beef bouillon
  • pepper to taste
  • 8 oz. cubed tofu
  • 2 oz. cornmeal

Instructions

  1. Mix and simmer all but the last three ingredients until tender.
  2. Add the cubed tofu and cornmeal to the mixture.
  3. Pour the mixture into a baking dish and top with cheese.
  4. Bake at 350°F for 30 minutes or until bubbly on top.
