Instructions
- Line an 11 x 7-inch baking dish with pie crust.
- Cook chopped broccoli and chopped onion, covered, with margarine and water for about 5 minutes until tender.
- Remove from heat and set aside.
- Beat half and half and eggs together in a bowl.
- Add shredded Swiss cheese, salt, pepper, nutmeg, and the broccoli mixture to the egg mixture and combine.
- Mix grated Parmesan cheese and bread crumbs in a separate bowl.
- Sprinkle 1/3 cup of Parmesan cheese mixture on the bottom of the pie crust.
- Dip tomato slices in the Parmesan cheese mixture and arrange a layer on top of the crust.
- Pour the broccoli and egg mixture over the tomatoes.
- Dip remaining tomato slices in Parmesan cheese mixture and arrange on top of the filling.
- Bake at 375°F (190°C) for 1 hour.
