Ingredients

  • 1/2 cup soft shortening
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 1/2 to 2 cups mashed cooked carrots
  • 2 cups unbleached flour
  • 1/2 cup oat bran
  • 1/4 cup unprocessed wheat bran
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 1/2 cups raisins
  • 1 1/2 cups chocolate chips
  • 1 1/2 cups chopped walnuts

Instructions

  1. Begin by beating together in a large bowl the shortening, sugar, eggs, and mashed cooked carrots.
  2. Next, stir in the remaining ingredients until well combined.
  3. Spread the batter evenly into a 13 x 9-inch cake pan.
  4. Bake at 325° F (163° C) for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
