Ingredients

  • 1 lb. Young turkey
  • 1 (8 oz.) can crushed pineapple in natural juices
  • 1 (12 oz.) jar red pepper or red currant jelly
  • 2 Tbsp. chopped, crystallized ginger
  • nonstick cooking spray
  • 2 Tbsp. butter
  • 3/4 c. currants
  • 1 c. chopped Macadamia nuts
  • 3 c. cooked brown rice
  • 1/2 c. chicken broth

Instructions

  1. Preheat oven to 350°F.
  2. Remove giblets and neck from turkey; set aside for another use.
  3. Remove and discard excess fat. Wash turkey; dry with paper towels.
  4. Drain pineapple, pouring juices into a small saucepan.
  5. Add jelly to pineapple juice; set aside. Reserve pineapple.
  6. In a large skillet over medium-high heat, melt butter.
  7. Add onion and Macadamia nuts; sauté until onion is tender, about 3 minutes.
  8. Add pineapple, rice, currants, ginger, and broth; heat through.
  9. Spoon mixture into the neck cavity of the turkey.
  10. Bring neck skin over stuffing into the body cavity; do not pack.

  12. Close the body cavity with poultry pins.
  13. Lace with string.
  14. Tie legs together.
  15. Pin wings to the breast.
  16. Grease the rack in the roasting pan with cooking spray.
  17. Place turkey, breast side up, on the rack.
  18. Insert a meat thermometer into the thickest part of the thigh, away from the bone.
  19. Heat the jelly mixture until the jelly melts, stirring until blended.
  20. Brush some of the jelly mixture over the turkey.
  21. Roast, uncovered, basting every 30 minutes with the jelly mixture, until thermometer registers 170°F.
  22. Place turkey on a warm serving platter.
  23. Remove pins and string.
  24. Let stand for 15 minutes for easier carving.
  25. Garnish with pineapple and papaya slices, lime twists, and parsley if desired.
