Ingredients

  • 2 Tbsp. margarine
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 tsp. minced garlic
  • 1 Tbsp. flour
  • 1 can chicken broth
  • 1 can crushed tomatoes (and juice)
  • 1/4 cup parsley
  • 1 bay leaf
  • 1/2 tsp. salt
  • 1/4 tsp. thyme
  • 1 (12 1/2 or 13 oz.) can tuna, drained
  • 10 oz. frozen cut okra or fresh
  • 1 tsp. lemon juice
  • 1 1/2 tsp. Worcestershire sauce
  • dash of cayenne pepper

Instructions

  1. Melt margarine in a large pot.
  2. Add chopped onion, green pepper, and minced garlic. Saute for about 5 minutes.
  3. Combine flour and chicken broth; mix well.
  4. Add the flour mixture to the onion, pepper, and garlic, stirring constantly.
  5. Add crushed tomatoes, parsley, bay leaf, salt, thyme, and seasonings to the pot.
  6. Bring the mixture to a boil.
  7. Cover and simmer for 30 minutes.
  8. Prepare rice according to package directions.
  9. Add drained tuna and frozen or fresh okra to the sauce and simmer for 10 minutes.
  10. Stir in lemon juice, Worcestershire sauce, and cayenne pepper.
  11. Serve the gumbo over cooked rice.
