Turkey Almondine is a flavorful dish featuring tender turkey cubes in a creamy mushroom and onion sauce, accented with almonds and herbs, perfect for special occasions or family dinners.

Ingredients

  • 3/4 lb. margarine or butter
  • 6 finely chopped onions
  • 1 lb. sliced in half mushrooms
  • 1 1/2 tsp. curry powder
  • dash of cayenne
  • 2 cups light cream or half and half
  • chopped parsley
  • 10 to 12 lb. turkey or turkey roll
  • 1 1/4 cups flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 tsp. dry mustard
  • 6 cups chicken broth
  • 1 cup sherry

Instructions

  1. Roast the turkey and allow it to cool.
  2. Cut the turkey into cubes or cubed strips, not slices.
  3. Melt 6 tablespoons of butter in a Dutch oven over medium heat.
  4. Saute onions until golden brown.
  5. Add mushrooms and saute for 4 minutes.
  6. Remove onions and mushrooms from the Dutch oven and set aside.
  7. Melt the remaining butter in the Dutch oven.
  8. Blend in flour, curry powder, cayenne, salt, pepper, and dry mustard.
  9. Gradually add chicken broth, stirring constantly until the mixture is smooth and thickened.
  10. Stir in light cream or half and half.
  11. Add the cubed turkey, toasted almonds, sautéed onions, and mushrooms.
  12. Mix thoroughly and cook until heated through before serving.
