Turkey Almondine
Turkey Almondine is a flavorful dish featuring tender turkey cubes in a creamy mushroom and onion sauce, accented with almonds and herbs, perfect for special occasions or family dinners.
Ingredients
- 3/4 lb. margarine or butter ⓘ
- 6 finely chopped onions ⓘ
- 1 lb. sliced in half mushrooms ⓘ
- 1 1/2 tsp. curry powder ⓘ
- dash of cayenne
- 2 cups light cream or half and half ⓘ
- chopped parsley ⓘ
- 10 to 12 lb. turkey or turkey roll ⓘ
- 1 1/4 cups flour ⓘ
- 1 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 1 1/2 tsp. dry mustard ⓘ
- 6 cups chicken broth
- 1 cup sherry ⓘ
Instructions
- Roast the turkey and allow it to cool.
- Cut the turkey into cubes or cubed strips, not slices.
- Melt 6 tablespoons of butter in a Dutch oven over medium heat.
- Saute onions until golden brown.
- Add mushrooms and saute for 4 minutes.
- Remove onions and mushrooms from the Dutch oven and set aside.
- Melt the remaining butter in the Dutch oven.
- Blend in flour, curry powder, cayenne, salt, pepper, and dry mustard.
- Gradually add chicken broth, stirring constantly until the mixture is smooth and thickened.
- Stir in light cream or half and half.
- Add the cubed turkey, toasted almonds, sautéed onions, and mushrooms.
- Mix thoroughly and cook until heated through before serving.
