A hearty Italian-inspired dish featuring tender turkey simmered in savory tomato sauce with vegetables, served over spaghetti and topped with fresh parsley and Parmesan cheese.

Instructions
- Cut turkey into small pieces.
- Spray skillet with cooking spray, add turkey pieces and brown; set aside.
- Add garlic, onion, green pepper, and mushrooms to the pan.
- Saute over high heat until vegetables are tender.
- Add tomatoes, tomato paste, and oregano; simmer for 10 minutes.
- Cook spaghetti according to package directions.
- Taste the turkey mixture and add salt and pepper if desired.
- Sprinkle chopped parsley on top.
- Serve the turkey mixture over portions of cooked spaghetti.
- Pass Parmesan cheese at the table.
