A hearty Italian-inspired dish featuring tender turkey simmered in savory tomato sauce with vegetables, served over spaghetti and topped with fresh parsley and Parmesan cheese.

Ingredients

  • 1 1/4 lb. boneless turkey breast
  • vegetable cooking spray
  • 2 cloves garlic
  • 1 onion
  • 1 green pepper
  • 3/4 lb. sliced mushrooms
  • 1 can whole tomatoes
  • 1 can tomato paste
  • 1 Tbsp. dried oregano leaves
  • 1/4 cup chopped parsley
  • salt and pepper
  • Parmesan cheese
  • 1 package spaghetti

Instructions

  1. Cut turkey into small pieces.
  2. Spray skillet with cooking spray, add turkey pieces and brown; set aside.
  3. Add garlic, onion, green pepper, and mushrooms to the pan.
  4. Saute over high heat until vegetables are tender.
  5. Add tomatoes, tomato paste, and oregano; simmer for 10 minutes.
  6. Cook spaghetti according to package directions.
  7. Taste the turkey mixture and add salt and pepper if desired.
  8. Sprinkle chopped parsley on top.
  9. Serve the turkey mixture over portions of cooked spaghetti.
  10. Pass Parmesan cheese at the table.
