Vibrant vegetable pitas filled with fresh, crunchy vegetables and a tangy yogurt-peanut dressing, perfect for a light, flavorful meal or snack suitable for vegetarians.

Ingredients

  • 3 Tbsp. unsalted peanuts
  • 1 1/2 c. torn leaf lettuce
  • 1 c. thinly sliced cucumber
  • 1 c. diced tomato
  • 2/3 c. raisins
  • 1/2 c. thinly sliced celery
  • 1/2 c. torn romaine lettuce
  • 1/3 c. shredded carrot
  • 1/3 c. chopped onion
  • 1/4 c. shredded Cheddar cheese
  • 2 Tbsp. mayonnaise
  • 2 Tbsp. parsley flakes
  • 2 Tbsp. plain yogurt
  • 1 tsp. Dijon mustard
  • 1/4 tsp. paprika
  • 1/8 tsp. ground red pepper
  • 1/8 tsp. black pepper
  • 3 (7-inch) pita rounds, halved

Instructions

  1. Combine the first nine ingredients (peanuts through torn romaine lettuce) in a bowl.
  2. Toss gently; in a separate small bowl, combine parsley flakes with mayonnaise, yogurt, Dijon mustard, paprika, red pepper, and black pepper, stirring well.
  3. Add the dressing to the vegetable mixture, tossing well to combine.
  4. Spoon 1 cup of the vegetable mixture into each pita half, reserving the remaining pita half for another use.
  5. Sprinkle each filled pita with shredded Cheddar cheese, then cut each pita half in half to serve.
