Vegetable Pitas
Vibrant vegetable pitas filled with fresh, crunchy vegetables and a tangy yogurt-peanut dressing, perfect for a light, flavorful meal or snack suitable for vegetarians.
Ingredients
- 3 Tbsp. unsalted peanuts ⓘ
- 1 1/2 c. torn leaf lettuce ⓘ
- 1 c. thinly sliced cucumber ⓘ
- 1 c. diced tomato ⓘ
- 2/3 c. raisins ⓘ
- 1/2 c. thinly sliced celery
- 1/2 c. torn romaine lettuce ⓘ
- 1/3 c. shredded carrot
- 1/3 c. chopped onion ⓘ
- 1/4 c. shredded Cheddar cheese ⓘ
- 2 Tbsp. mayonnaise
- 2 Tbsp. parsley flakes ⓘ
- 2 Tbsp. plain yogurt ⓘ
- 1 tsp. Dijon mustard ⓘ
- 1/4 tsp. paprika ⓘ
- 1/8 tsp. ground red pepper ⓘ
- 1/8 tsp. black pepper ⓘ
- 3 (7-inch) pita rounds, halved
Instructions
- Combine the first nine ingredients (peanuts through torn romaine lettuce) in a bowl.
- Toss gently; in a separate small bowl, combine parsley flakes with mayonnaise, yogurt, Dijon mustard, paprika, red pepper, and black pepper, stirring well.
- Add the dressing to the vegetable mixture, tossing well to combine.
- Spoon 1 cup of the vegetable mixture into each pita half, reserving the remaining pita half for another use.
- Sprinkle each filled pita with shredded Cheddar cheese, then cut each pita half in half to serve.
