Ingredients

  • 1/2 cup Wesson oil
  • 1/2 cup green pepper
  • 1/2 cup red onion
  • 1/2 cup carrots, chopped
  • 1 cup celery, cut crosswise
  • 3 medium yellow squash, cut crosswise
  • 1 small package frozen English peas
  • 2 pounds raw shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 teaspoon black pepper
  • 1/4 cup cornstarch
  • 1 cup cold water

Instructions

  1. Saute vegetables in hot oil in a skillet for 3 to 4 minutes.
  2. Remove vegetables from the skillet and set aside.
  3. In the same skillet, stir in the shrimp and cook until they turn pink.
  4. Return the vegetables to the skillet, add soy sauce and black pepper, and stir well.
  5. Mix cornstarch with cold water to dissolve, then pour into the skillet.
  6. Allow the mixture to bubble for about 1 minute until thickened.
  7. Serve over cooked rice.
