Vegetable Stir-Up

Ingredients
- 1/2 cup Wesson oil ⓘ
- 1/2 cup green pepper ⓘ
- 1/2 cup red onion ⓘ
- 1/2 cup carrots, chopped
- 1 cup celery, cut crosswise ⓘ
- 3 medium yellow squash, cut crosswise ⓘ
- 1 small package frozen English peas ⓘ
- 2 pounds raw shrimp, peeled and deveined
- 2 tablespoons soy sauce ⓘ
- 1 teaspoon black pepper ⓘ
- 1/4 cup cornstarch ⓘ
- 1 cup cold water ⓘ
Instructions
- Saute vegetables in hot oil in a skillet for 3 to 4 minutes.
- Remove vegetables from the skillet and set aside.
- In the same skillet, stir in the shrimp and cook until they turn pink.
- Return the vegetables to the skillet, add soy sauce and black pepper, and stir well.
- Mix cornstarch with cold water to dissolve, then pour into the skillet.
- Allow the mixture to bubble for about 1 minute until thickened.
- Serve over cooked rice.
