Vegetarian Burritos

Ingredients
- 8 flour tortillas ⓘ
- 1 Tbsp. olive oil ⓘ
- 2 carrots, peeled and shredded ⓘ
- 1 small onion ⓘ
- 1 clove garlic, pressed ⓘ
- 1 (8 oz.) can tomato sauce ⓘ
- 1 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained ⓘ
- 1 (10 oz.) pkg. frozen whole kernel corn, thawed and well drained ⓘ
- 1 (15 oz.) can black beans, drained and rinsed ⓘ
- 1 Tbsp. chili powder ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. ground cumin ⓘ
- dash of hot sauce ⓘ
- shredded Cheddar cheese ⓘ
Instructions
- Heat tortillas according to package directions.
- Heat olive oil in a large skillet.
- Add carrots, onion, and garlic.
- Cook, stirring constantly, for 2 minutes.
- Stir in tomato sauce, chopped broccoli, corn, black beans, chili powder, salt, and ground cumin.
- Cover and simmer for 5 minutes.
- Spoon about 1/2 cup of the vegetable mixture down the centers of each warm tortilla.
- Sprinkle with shredded Cheddar cheese.
- Fold sides over the filling.
- Serve immediately with salsa and guacamole.
