Ingredients

  • 8 flour tortillas
  • 1 Tbsp. olive oil
  • 2 carrots, peeled and shredded
  • 1 small onion
  • 1 clove garlic, pressed
  • 1 (8 oz.) can tomato sauce
  • 1 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained
  • 1 (10 oz.) pkg. frozen whole kernel corn, thawed and well drained
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 Tbsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground cumin
  • dash of hot sauce
  • shredded Cheddar cheese

Instructions

  1. Heat tortillas according to package directions.
  2. Heat olive oil in a large skillet.
  3. Add carrots, onion, and garlic.
  4. Cook, stirring constantly, for 2 minutes.
  5. Stir in tomato sauce, chopped broccoli, corn, black beans, chili powder, salt, and ground cumin.
  6. Cover and simmer for 5 minutes.
  7. Spoon about 1/2 cup of the vegetable mixture down the centers of each warm tortilla.
  8. Sprinkle with shredded Cheddar cheese.
  9. Fold sides over the filling.
  10. Serve immediately with salsa and guacamole.
