Ingredients

  • 1 lb. boneless beef sirloin steak
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 clove garlic
  • 1 Tbsp. vegetable oil
  • 1 c. red pepper strips
  • 1 c. sliced fresh mushrooms
  • 1 c. sliced zucchini
  • 1 (7 oz.) can corn
  • 1/3 c. sliced green onions
  • 3 c. cooked brown rice

Instructions

  1. Season beef with salt and pepper.
  2. In a large skillet, over high heat, heat vegetable oil.
  3. Add beef and minced garlic to the skillet; cook, stirring constantly, until beef is browned.
  4. Add red pepper strips, sliced mushrooms, sliced zucchini, drained corn, and sliced green onions.
  5. Stir-fry for 3 to 4 minutes or until vegetables are tender-crisp.
  6. Stir in cooked brown rice and heat through.
