Ingredients

  • 1 1/2 cups warm beer
  • 2 packages active dry yeast
  • 4 1/2 cups flour
  • 1/2 cup rye flour
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1/2 cup walnut oil
  • 1 cup finely chopped yellow onion
  • 3/4 cup coarsely chopped walnuts
  • 1 egg
  • 2 teaspoons water
  • fresh or dried rosemary

Instructions

  1. Heat 1/2 cup of beer to 105° to 115°, then pour into a small bowl and stir in the yeast. Let stand for 10 minutes.
  2. In a large bowl, mix the flour, rye flour, sugar, and salt.
  3. Make a well in the center of the dry ingredients.
  4. Pour the yeast mixture, 1/2 cup of walnut oil, and remaining 1 cup of beer into the well. Stir until blended.
  5. Knead the dough on a floured surface until smooth and elastic, about 10 minutes, adding more flour if necessary.
  6. Grease a large bowl with walnut oil.
  7. Place the dough in the bowl, cover with a damp towel, and let rise until doubled in size.
  8. Alternatively, let the dough rise in the refrigerator overnight.
