Weight Watcher Bran Muffins
These wholesome bran muffins are packed with fiber, sweet raisins, and warm spices, making them a nutritious breakfast or snack perfect for busy mornings or healthy snacking.
Ingredients
- 1 1/2 cups Bran Flakes cereal ⓘ
- 1 cup skim milk ⓘ
- egg substitute to equal 1 beaten egg ⓘ
- 1/4 cup melted diet margarine ⓘ
- 1 cup flour ⓘ
- 2 1/2 teaspoons baking powder ⓘ
- 1/2 teaspoon baking soda ⓘ
- 4 teaspoons brownulated light brown sugar ⓘ
- 1/2 to 1 teaspoon cinnamon ⓘ
- 1/2 teaspoon nutmeg ⓘ
- 3/4 cup golden raisins ⓘ
Instructions
- Mix the cereal, skim milk, egg substitute, and melted diet margarine in a large bowl.
- Combine the flour, baking powder, baking soda, brown sugar, cinnamon, and nutmeg in a medium-sized bowl.
- Add the dry ingredients to the cereal mixture all at once and stir until just combined.
- Microwave the raisins in water to plump them up.
- Stir the plumped raisins into the batter.
- Divide the batter evenly into 12 muffin cups.
- Bake at 400°F (200°C) for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before removing from the muffin tin. Can be wrapped individually and frozen.
