Ingredients

  • 1 1/2 cups grated zucchini
  • 1 1/2 cups rolled oats
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 2 teaspoons cream of tartar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1/3 cup frozen pineapple juice concentrate, thawed
  • 3/4 cup unsweetened applesauce
  • 1 (8 oz.) can juice-packed crushed pineapple, drained
  • 2 egg whites

Instructions

  1. Preheat oven to 325°F.
  2. Set grated zucchini between paper towels and press to remove excess moisture.
  3. In a medium bowl, combine oats, flour, baking soda, cream of tartar, cinnamon, nutmeg, and allspice; mix well.
  4. In a separate bowl, combine honey, pineapple juice concentrate, vanilla, applesauce, and crushed pineapple; stir into the flour mixture.
  5. Gently mix in egg whites.
  6. Stir in well-drained grated zucchini.
