  • 2 cups chopped canned tomatoes
  • 2 cups beef stock

Instructions

  1. Place all beans (except limas) in a bowl and cover with water. Soak overnight.
  2. Soak limas separately.
  3. Cover ham hock and sausage with water and bring to a boil.
  4. Add carrot, celery, and parsley. Simmer for 1 hour, removing the sausage after 15 minutes. Set aside.
  5. Saute chopped onion in olive oil until translucent.
  6. Add finely chopped garlic and cook briefly.
  7. Drain and remove grease from the ham hock water.
  8. Discard the cooked vegetables.
  9. Remove meat from the hock and chop coarsely. Discard skin and bone.
  10. Drain the soaked beans and place them in a large pot.
  11. Measure the degreased water and add enough to make 4 cups; pour over the beans.
  12. Bring to a boil.
  13. Add the onion and garlic mixture to the pot.
  14. Simmer and add spices: salt, paprika, cumin, chili powder, black pepper, and cinnamon.
  15. Continue simmering for 1 1/2 to 2 hours.
  16. Add chopped canned tomatoes, beef stock, and lima beans.
  17. Simmer the soup for another 30 minutes.
  18. Cut the sausage into 1/4-inch rings and add to the soup along with the chopped ham and vinegar.
  19. Simmer for an additional 10 minutes, then serve hot.
