Acadian Chicken
A savory chicken dish featuring tender breasts cooked in a flavorful broth with vegetables and creamy cheese, perfect for comforting family dinners or special occasions.
Ingredients
- 4 chicken breasts, skinned ⓘ
- 2 1/2 tsp. salt ⓘ
- 1/8 tsp. coarsely ground black pepper ⓘ
- 4 Tbsp. butter ⓘ
- 3 chicken bouillon cubes ⓘ
- 3 c. boiling water ⓘ
- 2 Tbsp. lemon juice ⓘ
- 1 tsp. dried onion flakes ⓘ
- 1 lb. carrots, peeled and thinly sliced ⓘ
- 1 (3 oz.) pkg. soft cream cheese ⓘ
- 1 c. sour cream ⓘ
- 3 Tbsp. finely chopped green pepper ⓘ
- 2 Tbsp. finely chopped green onion ⓘ
- 2 Tbsp. sliced pimiento ⓘ
- 1/2 tsp. Worcestershire sauce ⓘ
- 1/4 tsp. hot pepper sauce ⓘ
Instructions
- Sprinkle chicken on both sides with 1 1/4 teaspoons of salt and pepper.
- In a large heavy skillet, cook chicken breasts in melted butter over medium-high heat until golden brown on both sides. Remove and place in a large shallow baking pan.
- In a saucepan, dissolve the chicken bouillon cubes in boiling water.
- Pour half of the broth over the chicken in the baking pan.
- Sprinkle the chicken with lemon juice and dried onion flakes.
- Cover with foil and bake for 1 hour or until the chicken is tender.
