  • 1 (No. 10) can ketchup (13 cups)
  • 2 1/3 cups olive oil
  • 2 1/4 cups vinegar

Instructions

  1. Boil cauliflower for 3 minutes, then drain and set aside.
  2. Cut all vegetables except mushrooms and peppers into desired sizes.
  3. In a large kettle, sauté mushrooms in olive oil until tender.
  4. Add ketchup and green peppers to the mushrooms, stir well.
  5. Simmer the mixture for 15 minutes.
  6. Stir in vinegar, let cool for 10 minutes.
  7. Add remaining vegetables, olives, anchovies or capers, tuna, and cauliflower to the mixture.
  8. Simmer everything together for an additional 15 minutes.
  9. Pack the hot antipasto into sterilized jars.
  10. Process the jars in boiling water bath for 15 minutes for pints.
