Ingredients

  • 2 cups brown sugar
  • 2 cups white sugar
  • 2 teaspoons salt
  • 2 tablespoons baking powder
  • 3 cups flour
  • 1 pound Quaker natural cereal (yellow box)
  • 4 cups quick oats
  • 1 pound melted margarine
  • 4 eggs, beaten lightly
  • 1 teaspoon vanilla
  • 1/2 cup raisins (optional)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Combine dry ingredients: brown sugar, white sugar, salt, baking powder, and flour.
  2. Add melted margarine, beaten eggs, and vanilla to the dry ingredients mixture, one ingredient at a time, mixing well after each addition.
  3. Stir in lightly (optional) raisins and shredded coconut.
  4. Use about one heaping tablespoonful of dough for each cookie.
  5. Press each cookie flat before baking.
  6. Bake at 325°F (163°C) for 15 minutes on an ungreased baking sheet.
