Banana Stracciatella

Ingredients

  • 4 cups all-purpose flour
  • 1 tsp active dry yeast
  • 2 cups sugar
  • 5 1/2 tbsp unsalted butter, melted
  • 1 cup 2% or whole milk
  • 9 None eggs
  • 3 None medium bananas, mashed
  • 1/2 None lemon, juiced
  • 3 1/3 cups low-fat cottage cheese
  • 1 lb cream cheese
  • 1 tbsp custard powder
  • 1/4 lb dark chocolate chips
  • 25 oz cherries, from a can or jar, juice reserved
  • 1 None vanilla bean, seeds scraped out
  • 6 tbsp sliced almonds, toasted

Instructions

  1. Combine flour, yeast, 1/3 cup sugar, butter, milk and a pinch of salt. Add 1 egg and knead, using the dough hook attachment of a mixer, until smooth. Cover with plastic wrap and let proof in a warm area for about 45 mins.
  2. Preheat oven to 350°F. Line a 13x15 inch rimmed baking tray with parchment paper. On a floured surface, knead dough again then roll out to a 13x15 inch rectangle then line prepared pan. Mix bananas, lemon juice, cottage cheese, cream cheese, custard powder and 1 1/4 cups sugar until smooth. Add remaining eggs, 1 at a time. Add chocolate chips then spread over dough and bake for 45-50 mins. Remove from oven and let cool for 2 hours.
  3. Meanwhile, heat reserved cherry juice, remaining sugar and vanilla bean seeds and cook over medium heat for 1 min until syrupy. Remove from heat and add cherries. Allow to cool then chill.
  4. To serve, spread cherries over cooled cake and sprinkle with toasted almonds.
