Beef Kofta With Couscous
Ingredients
- 1 cup plain Greek yogurt ⓘ
- 1 tablespoon chopped fresh mint leaves
- 1 teaspoon finely chopped fresh garlic ⓘ
- 1 teaspoon freshly grated lemon zest ⓘ
- 2 tablespoons Land O Lakes Butter with Olive Oil & Sea Salt ⓘ
- 1 medium (1 cup) onion, chopped ⓘ
- 1 tablespoon finely chopped fresh garlic
- 1 teaspoon ground cumin ⓘ
- 1/2 teaspoon ground allspice ⓘ
- 1/4 teaspoon ground red pepper ⓘ
- 1 pound lean ground beef ⓘ
- 2 tablespoons chopped mint leaves ⓘ
- 2 tablespoons chopped flat leaf parsley
- 3/4 teaspoon salt
- 1/2 teaspoon pepper ⓘ
- 8 (6-inch) wooden skewers ⓘ
Instructions
- Combine all sauce ingredients in bowl; mix well.
- Cover; refrigerate.
- Melt 2 tablespoons Butter with Olive Oil & Sea Salt in skillet over medium heat until sizzling.
- Add onion and garlic; cook 4-5 minutes or until softened.
- Add cumin, allspice and red pepper; cook, stirring occasionally, 1 minute.
- Cool 5 minutes.
- Heat oven to 400F.
- Line 15x10x1-inch baking pan with aluminum foil; set aside.
- Combine cooled onion mixture and all remaining beef ingredients in bowl.
- Divide into 8 portions; roll each into 4-inch log.
- Insert wooden skewer into each log.
- Place onto prepared baking pan.
- Bake 15-17 minutes or until internal temperature reaches 165F and meat is no longer pink.
- Combine couscous, 2 tablespoons Butter with Olive Oil & Sea Salt and salt in bowl.
- Pour boiling water over couscous mixture; cover with plastic food wrap.
- Let stand 5 minutes or until water is absorbed.
- Fluff with fork; stir in chopped parsley and mint leaves.
- Serve couscous with kebabs and sauce.
