Beef Kofta With Couscous

Ingredients

  • 1 cup plain Greek yogurt
  • 1 tablespoon chopped fresh mint leaves
  • 1 teaspoon finely chopped fresh garlic
  • 1 teaspoon freshly grated lemon zest
  • 2 tablespoons Land O Lakes Butter with Olive Oil & Sea Salt
  • 1 medium (1 cup) onion, chopped
  • 1 tablespoon finely chopped fresh garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground red pepper
  • 1 pound lean ground beef
  • 2 tablespoons chopped mint leaves
  • 2 tablespoons chopped flat leaf parsley
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 (6-inch) wooden skewers

Instructions

  1. Combine all sauce ingredients in bowl; mix well.
  2. Cover; refrigerate.
  3. Melt 2 tablespoons Butter with Olive Oil & Sea Salt in skillet over medium heat until sizzling.
  4. Add onion and garlic; cook 4-5 minutes or until softened.
  5. Add cumin, allspice and red pepper; cook, stirring occasionally, 1 minute.
  6. Cool 5 minutes.
  7. Heat oven to 400F.
  8. Line 15x10x1-inch baking pan with aluminum foil; set aside.
  9. Combine cooled onion mixture and all remaining beef ingredients in bowl.
  10. Divide into 8 portions; roll each into 4-inch log.
  11. Insert wooden skewer into each log.
  12. Place onto prepared baking pan.
  13. Bake 15-17 minutes or until internal temperature reaches 165F and meat is no longer pink.
  14. Combine couscous, 2 tablespoons Butter with Olive Oil & Sea Salt and salt in bowl.
  15. Pour boiling water over couscous mixture; cover with plastic food wrap.
  16. Let stand 5 minutes or until water is absorbed.
  17. Fluff with fork; stir in chopped parsley and mint leaves.
  18. Serve couscous with kebabs and sauce.
