Bethany Cookies are rich, chewy treats packed with oatmeal, coconut, chocolate and butterscotch chips, and pecans, perfect for sharing with friends or enjoying with a glass of milk.

Ingredients

  • 1 cup butter
  • 1 cup salad oil
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon cream of tartar
  • 1 cup oatmeal
  • 1 cup coconut
  • 1 cup Rice Krispies
  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • 1 cup pecans

Instructions

  1. Blend butter and salad oil. Cream in the brown sugar and sugar.
  2. Beat in the egg and vanilla.
  3. Sift together the flour, salt, soda, and cream of tartar.
  4. Add the dry ingredients to the creamed mixture and mix well.
  5. Work in the oatmeal, coconut, Rice Krispies, chocolate chips, butterscotch chips, and chopped pecans.
  6. Drop by teaspoons onto ungreased baking sheets.
  7. Bake at 350°F (175°C) for 10 to 12 minutes or until golden brown.
