Ingredients

  • 1 lb low fat turkey sausage
  • 1/2 bell pepper, chopped
  • 1 small can ripe olives, chopped
  • chili powder to taste
  • 1 ready to bake pie crust
  • 1 pkg grated Colby and Jack cheese
  • 1 medium onion, chopped
  • 1 small can green chillies, chopped
  • 1 small jar salsa
  • 1 can black beans
  • 3 flour tortillas

Instructions

  1. Brown the onion, bell pepper, and turkey sausage in a skillet.
  2. Add chopped olives, green chillies, salsa, black beans, and chili powder; cook until combined.
  3. Line a large Pyrex bowl with a pie crust.
  4. Layer with the cooked meat mixture, a flour tortilla, and grated Colby and Jack cheese.
  5. Cover with another pie crust on top.
  6. Bake at 350°F for 50 minutes until golden brown on top.
