Ingredients

  • 1 lb. ground beef
  • 1 can black-eyed peas, drained
  • 1 cup onions, chopped
  • 3/4 cup creamed corn
  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 cup buttermilk
  • 1/4 cup oil
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 2 jalapeno peppers
  • 1 cup Cheddar cheese, grated

Instructions

  1. Brown the ground beef in a skillet and drain well. Break into small pieces.
  2. Add drained black-eyed peas, chopped onions, creamed corn, cornmeal, flour, buttermilk, oil, beaten eggs, salt, baking soda, and chopped jalapenos to the mixture.
  3. Mix all ingredients thoroughly until well combined.
  4. Pour the mixture into a well-greased 13 x 9 x 2-inch baking pan.
  5. Bake at 350°F (175°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
