Ingredients

  • 1/3 cup butter
  • 1/3 cup celery with leaves, chopped
  • 3 cups onions
  • 1/3 cup flour
  • 1 can chicken broth
  • 1 can evaporated milk
  • 1 1/2 cups 1% milk
  • 2 cups diced and partially cooked potatoes
  • 1/2 cup water from cooked potatoes
  • 1 pound fish, cut in bite-size pieces
  • 1/4 teaspoon nutmeg
  • dash hot sauce
  • 2 to 3 dashes paprika
  • parsley

Instructions

  1. Saute butter, chopped celery with leaves, and onions for 5 minutes.
  2. Add flour and stir until well blended.
  3. Stir in chicken broth, evaporated milk, and 1% milk.
  4. Cook until bubbly.
  5. Add diced and partially cooked potatoes and the water they were cooked in.
  6. Stir and cook a few minutes; then add remaining ingredients.
  7. Stir and cook a few more minutes.
  8. Add other seafood as desired, heat until bubbly, stirring continuously.
