Ingredients

  • 1/2 lb. pinto beans
  • 5 c. canned tomatoes
  • 1 lb. green peppers, chopped coarsely
  • 1/4 Tbsp. oil
  • 1 1/2 lb. onions, chopped
  • 2 cloves garlic, minced
  • 1/2 c. parsley, minced
  • 1/2 c. butter
  • 2 1/2 lb. ground beef
  • 1 lb. ground lean pork
  • 1/3 c. chili powder
  • 2 Tbsp. salt
  • 1 1/2 tsp. pepper
  • 1 1/2 tsp. cumin seed
  • 1 1/2 tsp. Accent

Instructions

  1. Soak pinto beans overnight in enough water to cover by 2 inches.
  2. Next day, pour beans and liquid into a large kettle; cover and simmer until tender, 1 to 2 hours.
  3. Add canned tomatoes and simmer 5 minutes longer.

Tips & Substitutions

For a richer flavor, consider adding a splash of Worcestershire sauce or a teaspoon of smoked paprika. If you're short on time, canned beans can be substituted for the dried pinto beans; just reduce the cooking time. You can also mix in other ground meats like turkey or chicken for a lighter version. For a vegetarian option, omit the meat and add more beans or vegetables.

Serving Suggestions

This chili is best served hot, garnished with fresh parsley or shredded cheese. It pairs beautifully with Totally Texas Cornbread for a complete meal. You can also serve it over rice or with tortilla chips for added texture. For a hearty meal, consider serving it alongside a fresh green salad.

Storage & Reheating

Store leftover chili in an airtight container in the fridge for up to 4 days. To freeze, portion it into freezer-safe bags or containers, and it will last up to 3 months. When reheating, use a stovetop or microwave, adding a splash of water if the chili thickens too much. Stir well to ensure even heating.

What can I add for extra heat?

If you prefer a spicier chili, consider adding diced jalapeños or a few dashes of hot sauce during cooking. You can also increase the amount of chili powder or add crushed red pepper flakes to suit your taste.

Is there a way to make this chili vegetarian?

Absolutely! To make a vegetarian version, simply omit the ground beef and pork. You can replace them with additional beans or lentils, and add more vegetables like zucchini or mushrooms to enhance the texture and flavor.
