Ingredients

  • 1 lb. ground beef
  • 1 Tbsp. olive oil
  • 3/4 cup chopped onion
  • 1 1/2 tsp. salt
  • 1/8 tsp. garlic powder
  • 1/8 tsp. thyme
  • 1/8 tsp. oregano
  • 1/2 bay leaf
  • 1 (1 lb.) can tomatoes
  • 1 cup cream of chicken soup
  • 1 cup Minute rice

Instructions

  1. Brown the ground beef and chopped onion in olive oil.
  2. Stir in salt, garlic powder, thyme, oregano, bay leaf, tomatoes, cream of chicken soup, and rice.
  3. Bring to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally.
  4. Spoon the mixture into a baking dish and top with sliced cheese.
  5. Broil until the cheese is melted.
  6. Garnish with sliced olives before serving.
