Ingredients

  • 1/2 tsp. olive oil
  • 1 lb. ground chicken breast, skinless
  • 1/2 cup onions, chopped
  • 15 oz. tomato sauce
  • 1/2 cup fat-free Parmesan cheese
  • 1/2 tsp. basil
  • 14 oz. macaroni and cheese dinner
  • 1 Tbsp. reduced fat margarine, melted
  • 2 Tbsp. unbleached flour
  • 1 1/2 cups skim milk
  • 2 whole egg whites, slightly beaten

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare a 2-quart casserole dish with cooking spray and set aside.
  3. In a skillet, heat olive oil over medium heat.
  4. Add ground chicken and chopped onions to the skillet.
  5. Cook until chicken is no longer pink and onions are tender.
  6. Stir in tomato sauce, 1/2 cup Parmesan cheese, and basil.
  7. Simmer the mixture for 10 minutes.
  8. Prepare macaroni and cheese dinner according to package directions, using skim milk and fat-free margarine.
  9. Spread the chicken mixture onto the bottom of the prepared casserole dish.
  10. Top the chicken mixture with the cooked macaroni and cheese dinner.
