A flavorful Mexican-style cornbread with sharp cheese, sweet and hot peppers, and a tender crumb, perfect as a side or snack for any meal.

Ingredients

  • 1 1/2 cups self-rising cornmeal
  • 1/2 cup cooking oil
  • 1 cup buttermilk
  • 1 cup creamed corn
  • 1 teaspoon grated onion
  • 1/2 large sweet pepper
  • 1/2 teaspoon grated hot pepper (optional)
  • 1 cup grated sharp cheese
  • 3 eggs

Instructions

  1. Mix all ingredients together, except cheese.
  2. Pour half of batter into a greased pan.
  3. Sprinkle grated cheese over the batter.
  4. Pour the remaining batter over the cheese.
  5. Bake at 375°F for one hour or until golden brown.
