Ingredients

  • 1 1/4 c. water
  • 1 c. chopped dates
  • 3/4 c. chopped pitted prunes
  • 1/2 c. dark raisins
  • 8 Tbsp. margarine
  • 2 eggs
  • 1 tsp. vanilla
  • 5 1/2 tsp. Diabetes Sweet
  • 1 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1/4 c. chopped walnuts

Instructions

  1. Combine water, chopped dates, chopped pitted prunes, and raisins in a medium saucepan.
  2. Bring to a boil, then reduce heat and simmer uncovered until fruit is tender and water is absorbed, about 10 minutes.
  3. Remove from heat and add margarine, stirring until melted. Cool to room temperature.
