Delicious date pineapple bars combine sweet, tangy pineapple with chopped dates and warm spices, perfect for snacking or sharing as a flavorful dessert or teatime treat.

Ingredients

  • 1/2 cup butter or margarine
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 2 cups all-purpose flour, sifted
  • 3/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1 1/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup honey
  • 1 cup crushed pineapple, not drained
  • 1 (7 1/2 oz.) package chopped dates
  • 1/2 cup chopped walnuts

Instructions

  1. Grease a 7 x 11-inch cake pan.
  2. Preheat oven to 350°F (moderate).
  3. Cream butter or margarine with brown sugar and eggs at high speed of electric mixer, guiding mixture into beaters with rubber scraper, until light and creamy.
  4. Sift flour; measure and sift with baking powder, salt, baking soda, cinnamon, and nutmeg.
  5. Add dry ingredients alternately with honey to the creamed mixture.
  6. Stir in crushed pineapple, chopped dates, and walnuts.
  7. Pour into prepared pan.
  8. Bake for 35 to 40 minutes.
  9. When cool, decorate with a thin sugar icing made by adding one tablespoon boiling water to 1 cup sifted confectioners sugar.
  10. Cut into 24 bars.
