Fancy Japanese Rice
A flavorful Japanese-inspired rice dish featuring savory vegetables, toasted almonds, and a soy-infused broth, perfect for a hearty and colorful meal for family or friends.
Ingredients
- 1 cup long grain rice ⓘ
- 1/2 cup sliced onions ⓘ
- 2 tablespoons butter
- 1 cup sliced celery ⓘ
- 1 large green pepper, slivered ⓘ
- 1 can bamboo shoots, drained ⓘ
- 1 can water chestnuts, drained ⓘ
- 3 cups chicken broth ⓘ
- 3 tablespoons soy sauce ⓘ
- 1 1/2 teaspoons salt ⓘ
- 1/2 teaspoon pepper ⓘ
- 1 cup blanched slivered almonds ⓘ
Instructions
- Place the rice in a shallow pan and toast at 350°F until light brown, stirring occasionally.
- In a saucepan, sauté sliced onions in melted butter until translucent.
- Add sliced celery, slivered green pepper, drained bamboo shoots, drained water chestnuts, chicken broth, soy sauce, salt, and pepper to the saucepan.
- Cook over medium heat until hot but not boiling.
- Place the toasted rice in a 3-quart casserole dish.
- Pour the hot liquid with vegetables over the rice.
- Sprinkle slivered almonds on top.
- Cover and bake at 350°F for 45 minutes, or until the liquid is absorbed.
