Ingredients

  • 1 cup long grain rice
  • 1/2 cup sliced onions
  • 2 tablespoons butter
  • 1 cup sliced celery
  • 1 large green pepper, slivered
  • 1 can bamboo shoots, drained
  • 1 can water chestnuts, drained
  • 3 cups chicken broth
  • 3 tablespoons soy sauce
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 cup blanched slivered almonds

Instructions

  1. Place the rice in a shallow pan and toast at 350°F until light brown, stirring occasionally.
  2. In a saucepan, sauté sliced onions in melted butter until translucent.
  3. Add sliced celery, slivered green pepper, drained bamboo shoots, drained water chestnuts, chicken broth, soy sauce, salt, and pepper to the saucepan.
  4. Cook over medium heat until hot but not boiling.
  5. Place the toasted rice in a 3-quart casserole dish.
  6. Pour the hot liquid with vegetables over the rice.
  7. Sprinkle slivered almonds on top.
  8. Cover and bake at 350°F for 45 minutes, or until the liquid is absorbed.
