Ingredients

  • 1 lb. lean ground beef
  • 1 c. chopped onion
  • 1/4 tsp. instant garlic or 2 cloves garlic
  • 1 can cream of mushroom soup
  • 1 c. water
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 Tbsp. Worcestershire sauce
  • 1 (4 oz.) can chopped green chilies
  • 1 small can diced olives
  • 1 can whole kernel corn, drained
  • 1 can kidney beans, drained
  • 3 c. grated cheese
  • 2 c. cooked shell macaroni

Instructions

  1. Brown the lean ground beef in a deep pan.
  2. Season with salt and pepper to taste.
  3. Add chopped onion to the meat and cook until translucent.
  4. Stir in the instant garlic or minced garlic cloves.
  5. Add cream of mushroom soup, water, tomato sauce, chili powder, cumin, Worcestershire sauce, chopped green chilies, diced olives, drained whole kernel corn, and drained kidney beans.
  6. Mix everything thoroughly and cook over medium heat until heated through.
  7. Cook the shell macaroni in boiling water with 1 to 2 tablespoons of oil until al dente, then drain without rinsing.
  8. Add 2 cups of grated cheese to the meat mixture and stir to combine.
  9. Fold in the cooked macaroni into the mixture.
  10. Transfer the mixture to a casserole dish.
  11. Top with the remaining 1 cup of grated cheese.
  12. Optional: Garnish with tomato wedges on top.
  13. Bake at 350°F for about 30 minutes until the mixture bubbles and cheese is melted.
