Garden Linguine
A vibrant garden-inspired linguine with fresh vegetables, herbs, and Parmesan, perfect for a light, flavorful vegetarian or chicken dinner bursting with garden flavors.
Ingredients
- 2 Tbsp. olive oil
- 1/2 c. butter ⓘ
- 3/4 c. chopped green onion
- 2 cloves garlic ⓘ
- 1/2 lb. mushrooms ⓘ
- 1 medium zucchini ⓘ
- 2 medium carrots ⓘ
- 1 c. snow peas ⓘ
- 1 lb. asparagus (or broccoli) ⓘ
- 1/2 c. chicken broth ⓘ
- 1 c. heavy cream ⓘ
- 2 Tbsp. minced fresh basil ⓘ
- 2 Tbsp. minced fresh parsley ⓘ
- 1/4 tsp. pepper
- 1/4 tsp. salt ⓘ
- 9 oz. linguine ⓘ
- 1 c. grated Parmesan cheese ⓘ
Instructions
- In a large skillet, heat olive oil and butter over medium heat.
- Add chopped green onion, garlic, mushrooms, zucchini, carrots, snow peas, and asparagus (or broccoli). Cook until vegetables are tender.
- Pour in chicken broth and heavy cream; stir in minced basil, parsley, salt, and pepper.
- Simmer for 3 to 4 minutes to allow flavors to meld.
- In a heated serving dish, toss cooked and drained linguine with the vegetable mixture and grated Parmesan cheese.
- Serve immediately.
