Ingredients

  • 2 Tbsp. olive oil
  • 1/2 c. butter
  • 3/4 c. chopped green onion
  • 2 cloves garlic
  • 1/2 lb. mushrooms
  • 1 medium zucchini
  • 2 medium carrots
  • 1 c. snow peas
  • 1 lb. asparagus (or broccoli)
  • 1/2 c. chicken broth
  • 1 c. heavy cream
  • 2 Tbsp. minced fresh basil
  • 2 Tbsp. minced fresh parsley
  • 1/4 tsp. pepper
  • 1/4 tsp. salt
  • 9 oz. linguine
  • 1 c. grated Parmesan cheese

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat.
  2. Add chopped green onion, garlic, mushrooms, zucchini, carrots, snow peas, and asparagus (or broccoli). Cook until vegetables are tender.
  3. Pour in chicken broth and heavy cream; stir in minced basil, parsley, salt, and pepper.
  4. Simmer for 3 to 4 minutes to allow flavors to meld.
  5. In a heated serving dish, toss cooked and drained linguine with the vegetable mixture and grated Parmesan cheese.
  6. Serve immediately.
