Ingredients

  • 2 c. flour
  • 1/2 c. brown sugar
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1/8 tsp. cloves
  • 8 oz. plain yogurt or sour cream
  • 1/2 c. oil
  • 3 Tbsp. molasses
  • 1 egg, beaten
  • 1 1/2 c. pears, peeled and diced
  • 1/2 c. raisins
  • 1/3 c. chopped walnuts

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sift together flour, baking soda, salt, ginger, cinnamon, nutmeg, and cloves in a bowl.
  3. In a separate mixing bowl, beat together brown sugar, plain yogurt (or sour cream), oil, beaten egg, and molasses until well combined.
  4. Gradually add the dry ingredients to the creamed mixture, stirring until just combined.
  5. Fold in diced pears, raisins, and chopped walnuts if using the walnuts.
  6. Line a muffin tin with paper liners or butter the cups, then divide the batter evenly among the cups.
  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
