  • 3 Tbsp. margarine
  • 1/4 to 1/2 tsp. curry powder
  • 1/4 c. flour
  • 3/4 c. milk
  • 2 to 3 Tbsp. prepared mustard
  • 1 tsp. grated onion
  • 3/4 c. dry bread crumbs
  • 2 c. coarsely ground ham
  • 1 beaten egg
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • dash of pepper
  • 1/4 c. milk

Instructions

  1. In a saucepan, melt butter; stir in flour and curry powder.
  2. Gradually add milk and cook, stirring, until bubbly.
  3. Cook and stir 2 minutes longer.
  4. Remove from heat and stir in mustard and onion. Add ham and mix well.
  5. Cover and chill thoroughly.
  6. With wet hands, shape into 10 balls.
  7. Roll the balls in bread crumbs.
  8. Shape each ball into a cone.
  9. Dip each cone into beaten egg.
  10. Roll again in bread crumbs.
  11. Heat oil in a deep fat fryer to 365°F (185°C).
  12. Fry a few croquettes at a time for 2 to 2 1/2 minutes until golden brown.
