Ingredients

  • 8 c. peeled, ground cucumbers
  • 3 c. ground onions
  • 5 c. ground cabbage
  • 1 c. ground green peppers
  • 1 c. ground red peppers
  • 1 qt. water
  • 2 Tbsp. salt
  • 3 1/2 c. cider vinegar
  • 2 c. sugar
  • 1 Tbsp. mustard seed
  • 1 Tbsp. celery seed
  • 1/2 c. sifted flour
  • 2 Tbsp. dry mustard

Instructions

  1. Combine peeled, ground cucumbers, ground onions, ground cabbage, ground green peppers, ground red peppers, water, and salt; let stand overnight.
  2. Drain well and discard the brine.
  3. In a 6-quart pan, combine the vegetables, cider vinegar, sugar, mustard seed, and celery seed; simmer for 30 minutes.
  4. In a small bowl, mix sifted flour, dry mustard, and turmeric; add to the relish and cook for an additional 10 minutes.
  5. Pack the hot relish into sterilized jars and process in a hot water bath for 10 minutes.
