Ingredients

  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/4 cup butter or margarine, melted
  • 3 cups chicken broth
  • 1 medium potato, cubed
  • 1/2 cup chopped carrot
  • 1/2 cup flour
  • 2 cups milk
  • 12 ounces sharp American cheese or Cheddar cheese, cubed
  • 1 tablespoon fresh parsley

Instructions

  1. Saute celery, onion, and green pepper in melted butter in a Dutch oven until tender.
  2. Add chicken broth, cubed potato, and chopped carrot; bring to a boil.
  3. Cover, reduce heat, and simmer for 20 minutes or until vegetables are tender.
