Ingredients

  • 1 head celery
  • 1 bunch parsley
  • 1/2 lb green beans
  • 4 zucchini
  • 1 lb fresh spinach
  • 1/2 lb beets
  • 1/2 lb greens or chard
  • 1/2 green bell pepper
  • 1 bunch scallions
  • 1 large potato
  • 3 carrots
  • 1/2 head cauliflower
  • 1 head broccoli
  • 1 turnip

Instructions

  1. Chop all vegetables and herbs as needed.
  2. Add the celery, parsley, green beans, zucchini, spinach, beets, greens, chard, bell pepper, scallions, potato, carrots, cauliflower or broccoli, turnip, parsnip, garlic, and herbs to a large pot.
  3. Fill with water to cover the vegetables.
  4. Bring to a boil, then reduce heat and simmer for about 45 minutes.
  5. Strain the broth and season to taste if desired.
  6. Serve hot as a nourishing starter or light meal.
